Begin by marinating the chicken breasts. In a small bowl, mix the Cajun seasoning with olive oil to create a paste. Rub this mixture all over the chicken. Allow it to marinate for at least 30 minutes if time permits.
Preheat a grill or grill pan over medium-high heat. Once hot, grill the marinated chicken for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Once cooked, remove from heat and let it rest for 5 minutes.
While the chicken is resting, prepare the wraps. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, grated Parmesan cheese, and Caesar dressing. Toss until the lettuce is evenly coated with the dressing.
Slice the grilled chicken into strips and add it to the bowl with the salad mixture. Gently toss to combine.
Lay a tortilla flat on a clean surface. Spoon a generous amount of the chicken Caesar mixture onto the center of the tortilla. Fold in the sides and roll the tortilla tightly from the bottom up to form a wrap. Repeat this step with the remaining tortillas.
For extra flavor, you can heat the wraps on the grill for an additional minute on each side, just until they are slightly crispy.
Cut each wrap in half diagonally and serve while warm, garnished with extra Parmesan cheese and a sprinkle of black pepper, if desired.
