1 lb boneless, skinless chicken thighs

2 cups orzo pasta

1 tablespoon Cajun seasoning

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup diced tomatoes (canned or fresh)

4 cups chicken broth

1 cup heavy cream

1 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: In a bowl, mix the chicken thighs with Cajun seasoning, salt, and pepper. Ensure they are well coated.

    Sear the Chicken: In a large skillet or saucepan, heat olive oil over medium-high heat. Add the seasoned chicken thighs and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until fragrant. Add the red and green bell peppers and cook for another 3-4 minutes until they begin to soften.

        Add the Orzo: Stir in the orzo pasta, allowing it to absorb the flavors for about 2 minutes.

          Combine Ingredients: Pour in the diced tomatoes and chicken broth. Stir to combine, and nest the seared chicken thighs back into the mixture. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.

            Create Creaminess: Once the orzo is cooked, pour in the heavy cream and stir until everything is well combined. Cook for an additional 2-3 minutes until heated through.

              Add Cheese: Remove from heat and stir in the shredded mozzarella cheese until melted and creamy.

                Serve: Garnish with fresh chopped parsley and additional seasoning if desired. Serve warm and enjoy!
