2 salmon fillets (6 oz each)

1 cup shrimp, peeled and deveined

1 tablespoon Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth (low sodium)

1 cup cherry tomatoes, halved

1 cup spinach, fresh

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 lemon, zested and juiced

8 oz fettuccine pasta (or pasta of choice)

Instructions
 

Cook the Pasta: Start by cooking the fettuccine according to package instructions in a large pot of salted boiling water. Drain and set aside, saving ½ cup of the pasta water.

    Prepare the Seafood: While the pasta cooks, season the salmon fillets and shrimp with Cajun seasoning, salt, and pepper.

      Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the salmon fillets skin-side down, cooking for about 4-5 minutes until the skin is crispy. Carefully flip and cook for an additional 3-4 minutes until the salmon is cooked through. Remove the salmon from the skillet and set aside.

        Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil and shrimp. Sauté for about 2-3 minutes until they turn pink and opaque. Remove the shrimp and set aside with the salmon.

          Make the Sauce: In the same skillet, add minced garlic, and sauté for about 30 seconds until fragrant. Pour in the chicken broth, scraping any brown bits from the bottom of the pan. Let it simmer for about 2-3 minutes.

            Add Cream and Vegetables: Lower the heat, then stir in the heavy cream and lemon juice. Add the cherry tomatoes and spinach, allowing the mixture to simmer for an additional 3-5 minutes until the spinach wilts and the sauce thickens slightly.

              Combine: Add the cooked pasta into the sauce, tossing to coat. If the sauce is too thick, add some reserved pasta water until desired consistency is achieved. Add the shrimp and flake the salmon gently over the pasta, allowing it to mix in without breaking apart too much.

                Serve: Adjust seasoning with additional salt, pepper, and lemon zest to taste.
