Ingredients
  

1.5 lbs pork tenderloin

2 tablespoons Cajun seasoning

3 tablespoons honey

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Pork: In a small bowl, whisk together the olive oil, honey, Cajun seasoning, minced garlic, Dijon mustard, apple cider vinegar, salt, and pepper until well combined.

    Coat the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it’s well coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour (or overnight for best flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: In an oven-safe skillet over medium-high heat, add a bit of olive oil. Once hot, remove the pork from the marinade, reserving the marinade, and sear the pork for about 3-4 minutes on each side until browned.

          Bake: Pour the reserved marinade over the seared pork. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

            Rest and Slice: Remove the pork from the oven and let it rest for about 5-10 minutes. This allows the juices to redistribute. Slice the tenderloin into medallions.

              Serve: Plate the sliced pork, drizzle with any remaining sauce from the skillet, and sprinkle fresh parsley on top for garnishing. Serve with your choice of sides.
