2 cups elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 ½ cups shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 tablespoon Cajun seasoning

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

2 green onions, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Roux: In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until slightly golden but not browned.

      Add Milk: Gradually pour in the milk, continuing to whisk to prevent lumps. Cook for another 3-4 minutes until the mixture thickens slightly.

        Cheese It Up: Lower the heat and add the shredded sharp cheddar and pepper jack cheeses to the sauce. Stir until completely melted and smooth.

          Season the Sauce: Mix in the Cajun seasoning, smoked paprika, garlic powder, onion powder, and season with salt and pepper to taste. Stir well to combine all flavors.

            Combine: Add the cooked macaroni to the cheese sauce and stir until everything is evenly coated.

              Prepare for Baking (Optional): If you like a crispy top, preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish, sprinkle breadcrumbs on top, and bake for about 20 minutes or until bubbly and golden brown.
