Ingredients
  

4 large potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

2 stalks celery, diced

1 medium bell pepper (red or green), diced

1 cup corn kernels (fresh or frozen)

4 cups vegetable broth

1 cup heavy cream

2 tablespoons Cajun spice blend

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup chopped green onions ( for garnish)

1/4 cup shredded cheddar cheese (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and bell pepper. Sauté for about 5 minutes until the vegetables are softened.

    Add the minced garlic and cook for another minute until fragrant.

      Stir in the Cajun spice blend and mix well, allowing the spices to toast slightly for enhanced flavor.

        Add the diced potatoes and corn to the pot, mixing them with the vegetables and spices.

          Pour in the vegetable broth, bringing the mixture to a boil. Reduce heat and let it simmer for about 20 minutes or until the potatoes are tender.

            Once the potatoes are cooked, use an immersion blender to carefully blend the soup until smooth (or you can transfer it to a blender in batches). If you prefer a chunkier texture, blend just half of the soup.

              Stir in the heavy cream, and season with salt and pepper to taste. Allow it to heat through for an additional 5 minutes.

                Remove from heat and serve hot, garnished with chopped green onions and shredded cheddar cheese if desired.
