4 large russet potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons olive oil

4 cups vegetable broth

1 cup heavy cream (or a plant-based alternative)

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 green onions, chopped (for garnish)

1/2 cup shredded cheddar cheese (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.

    Add the minced garlic and cook for another minute, stirring frequently to prevent burning.

      Stir in the diced potatoes, Cajun seasoning, smoked paprika, and cayenne pepper. Mix well to coat the potatoes with the spices.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 15-20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use an immersion blender to blend the soup until it’s creamy. For a chunkier texture, blend only half of the soup and leave the rest intact.

            Stir in the heavy cream and season with salt and pepper to taste. Allow the soup to simmer for an additional 5 minutes, ensuring everything is heated through.

              Serve hot and garnish with chopped green onions and shredded cheddar cheese if desired.
