Cajun Seafood Pot Pie A Southern Comfort Classic

1 pound shrimp, peeled and deveined

1 pound crab meat (lump or claw)

1 cup scallops

1/2 cup butter

1 onion, diced

2 celery stalks, diced

1 bell pepper, chopped

3 cloves garlic, minced

1/4 cup all-purpose flour

1 cup chicken broth

1 cup heavy cream

2 teaspoons Cajun seasoning

1 teaspoon Old Bay seasoning

Salt and pepper to taste

1 cup frozen peas

1 cup corn kernels (canned or frozen)

1 package (2 crusts) refrigerated pie crusts

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large skillet over medium heat, melt the butter. Add the diced onion, celery, bell pepper, and minced garlic. Sauté for about 5-7 minutes until the vegetables soften.

      Sprinkle in the flour, stirring continuously to combine. Cook for 2-3 minutes until the mixture is golden.

        Gradually whisk in the chicken broth and heavy cream, ensuring there are no lumps. Allow the mixture to thicken, cooking for 5-8 minutes.

          Stir in the Cajun seasoning, Old Bay seasoning, salt, pepper, shrimp, crab meat, scallops, peas, and corn. Cook for an additional 5 minutes until the seafood is just cooked through. Remove from heat.

            Roll out one pie crust and fit it into a 9-inch pie dish. Pour the seafood filling onto the crust, spreading it evenly.

              Cover the filling with the second pie crust, sealing the edges by crimping them together. Cut several slits in the top crust to allow steam to escape.

                Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.

                  Once baked, let the pot pie cool for about 10 minutes before slicing.

                    Garnish with fresh chopped parsley before serving.
