1 lb large shrimp, peeled and deveined

1 cup long-grain rice

2 cups chicken broth (low sodium)

1 medium onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

2 tablespoons olive oil

Salt and black pepper to taste

1/4 cup chopped green onions (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Shrimp: In a medium bowl, season the shrimp with Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Toss until evenly coated and set aside to marinate for about 15 minutes.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, green pepper, and red pepper. Sauté for about 5-7 minutes until the vegetables are tender.

      Add Garlic: Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

        Cook the Rice: Add the rice to the skillet and mix with the sautéed vegetables. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover the skillet, and simmer for 15 minutes or until the rice is tender and liquid is absorbed.

          Cook the Shrimp: While the rice cooks, in a separate pan, heat a splash of olive oil over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove from heat.

            Combine: Once the rice is ready, fluff it with a fork and gently fold in the cooked shrimp. Adjust seasoning if necessary.
