6 large eggs

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper to taste

1/2 cup cooked shrimp, chopped

1 green onion, finely sliced

Fresh parsley, for garnish

Lemon wedges, for serving

Instructions
 

Boil the Eggs: Place the eggs in a pot, cover with cold water, and bring to a boil. Once boiling, remove from heat, cover, and let sit for 12 minutes. Then, place eggs in an ice bath to cool.

    Prepare the Filling: While the eggs cool, chop the cooked shrimp and set aside. In a mixing bowl, combine the mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Stir until smooth.

      Shell the Eggs: Once cooled, peel the eggs and slice them in half lengthwise. Gently remove the yolks and place them into the mixing bowl with the mayonnaise mixture.

        Mix the Yolks: Mash the egg yolks with a fork until smooth, then fold in the chopped shrimp and half of the sliced green onions. Mix well until all ingredients are fully integrated.

          Fill the Egg Whites: Using a piping bag or a spoon, fill each egg white half with the shrimp mixture, mounding it slightly on top.

            Garnish: Sprinkle the remaining green onions over the filled eggs and add a sprinkle of additional Cajun seasoning for extra flavor. Garnish with fresh parsley.
