4 boneless, skinless chicken breasts

2 cups fresh mozzarella cheese, sliced

2 large tomatoes, thinly sliced

1 cup fresh basil leaves

4 tablespoons balsamic glaze

4 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

1 teaspoon Italian seasoning

Instructions
 

Preheat your oven to 375°F (190°C).

    Place each chicken breast on a cutting board. Using a sharp knife, make several horizontal slits across the top of each chicken breast, making sure not to cut all the way through—these should be about 1 inch apart.

      In a small bowl, mix together the olive oil, minced garlic, salt, pepper, and Italian seasoning. Brush this mixture over the chicken breasts, ensuring some seeps into the slits.

        Carefully stuff each slit with alternating slices of mozzarella cheese, tomato, and a basil leaf. This should create a colorful pattern on top of the chicken.

          Place the stuffed chicken breasts in a baking dish. Drizzle the remaining olive oil over the top and finish with any remaining mozzarella and tomato slices.

            Cover the baking dish with aluminum foil and bake for 25 minutes.

              After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and slightly golden.

                Remove from the oven and drizzle with balsamic glaze before serving.
