Instructions
Preheat your oven to 375°F (190°C).
In a bowl, combine the mozzarella cheese, cherry tomatoes, basil leaves, and 1 tablespoon of balsamic glaze. Mix gently to combine and set aside.
Take each chicken breast and use a sharp knife to create a pocket in the thickest part. Be careful not to cut all the way through.
Season the chicken breasts inside and out with garlic powder, salt, and pepper.
Stuff each chicken breast with the mozzarella, tomato, and basil mixture, filling generously.
Secure the openings with toothpicks or kitchen twine to prevent the filling from spilling out during cooking.
In a large oven-safe skillet, heat the olive oil over medium-high heat.
Once hot, sear the stuffed chicken breasts on both sides until golden brown, about 4-5 minutes per side.
Drizzle the remaining balsamic glaze over the chicken, then transfer the skillet to the preheated oven.
Bake for an additional 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/75°C).
Remove from the oven and let rest for a few minutes before removing the toothpicks or twine.
Notes
Serve with a side salad or roasted vegetables for a complete meal.
