1 cup granulated sugar, divided

3 (8 oz) packages cream cheese, softened

1 teaspoon vanilla extract

3 large eggs

Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool slightly.

    Cook the Apples: In a medium skillet over medium heat, add the diced apples, remaining ¾ cup sugar, lemon juice, cinnamon, and half of the caramel sauce. Cook for about 5-7 minutes until the apples are slightly soft but still hold their shape. Remove from heat and let cool.
