1 cup unsalted butter (2 sticks)

2 cups granulated sugar

1 cup packed brown sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking powder

16 ounces cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1/2 cup sour cream

1 cup caramel sauce (plus extra for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

    Make the Brownie Layer:

      - In a saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in granulated sugar and brown sugar until smooth.

        - Add eggs, one at a time, mixing well after each addition, followed by vanilla.

          - In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.

            - Gradually add the dry ingredients to the wet mixture until just combined. Pour the brownie batter into the prepared springform pan, spreading it evenly.

              Bake the Brownie Layer: Bake in the preheated oven for 20-25 minutes. The edges should look set, but the center can be slightly underbaked; it will firm up as it cools. Let it cool completely in the pan.

                Prepare the Cheesecake Layer:

                  - In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add granulated sugar and mix well.

                    - Add in the vanilla extract, sour cream, and one egg at a time, mixing until fully incorporated and smooth.

                      Layer the Cheesecake on Brownie:

                        - Once the brownie layer is completely cool, pour the cheesecake mixture over it. Gently spread to ensure an even layer on top.

                          - Drizzle 1 cup of caramel sauce over the cheesecake batter. Using a knife, gently swirl the caramel into the cheesecake.

                            Bake the Cheesecake: Bake in the oven for 50-60 minutes or until the center is set with a slight jiggle. Turn off the oven and leave the cheesecake in the oven for an additional hour to cool slowly.

                              Cool and Chill: Remove the cheesecake from the oven and let it cool to room temperature for about 1 hour. Then refrigerate for at least 4 hours, preferably overnight, to set completely.

                                Serve: Before serving, remove the sides of the springform pan. Drizzle extra caramel sauce over the top, and add dollops of whipped cream around the edges. Optionally, sprinkle with chocolate shavings and a pinch of sea salt for extra flavor.
