Ingredients

1 cup granulated sugar (for caramel)

1 cup whole milk

1/2 cup sweetened condensed milk

3 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/4 cup brown sugar (for added depth)

Instructions

Make the Caramel: In a medium saucepan, heat 1 cup of granulated sugar over medium heat, stirring constantly until it melts and turns a golden brown color. Be careful not to burn it. Immediately pour the caramel into the bottoms of muffin cups, swirling to coat the base evenly. Set aside to harden.

Prepare the Flan Mixture: In a mixing bowl, combine the whole milk, sweetened condensed milk, eggs, and vanilla extract. Whisk until fully blended and smooth.

Mix Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, salt, and brown sugar until well combined.

Combine Ingredients: Pour the wet flan mixture into the dry ingredients, and add the melted butter. Stir until just combined, being careful not to overmix.

Fill Muffin Cups: Carefully pour the batter over the hardened caramel in each muffin cup, filling them about 3/4 full.

Bake: Preheat your oven to 350°F (175°C). Bake the muffins for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Cool and Unmold: Allow the muffins to cool in the pan for 10 minutes, then gently run a knife around the edges to loosen them. Invert them onto a wire rack to release the caramel. Let them cool completely.

Serving: Serve the Caramel Flan Muffins chilled or at room temperature. They can be enjoyed as a delightful dessert or a sweet breakfast treat!
