Instructions
In a skillet over medium heat, melt the butter. Once melted, add the brown sugar and stir until the sugar dissolves and forms a gooey mixture.
Add the sliced bananas to the skillet and sauté for about 3-4 minutes, until they become caramelized and slightly softened. Remove from heat and set aside.
In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.
Heat a non-stick skillet or griddle over medium heat.
Dip each slice of bread into the egg mixture, allowing it to absorb some of the liquid, but not too long to avoid sogginess.
Place the soaked bread slices onto the skillet and cook for about 2-3 minutes per side, or until golden brown and cooked through.
Serve the French toast hot, topped with the caramelized bananas. Drizzle with maple syrup and garnish with fresh mint leaves if desired.
