12 oz spaghetti or fettuccine

3 large yellow onions, thinly sliced

3 tablespoons olive oil

2 tablespoons butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh parsley, chopped, for garnish

Instructions
 

Cook the pasta: In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Caramelize the onions: In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the sliced onions. Stir occasionally for about 25-30 minutes, or until they turn deep golden brown and caramelized. If they start to stick, reduce the heat and add a splash of reserved pasta water.

      Add garlic and seasonings: Once the onions are caramelized, add the minced garlic, thyme, and red pepper flakes (if using). Cook for an additional 2-3 minutes until fragrant. Season with salt and black pepper to taste.

        Combine with pasta: Add the drained pasta to the skillet with the caramelized onions. Toss to combine. If the mixture seems dry, gradually add some of the reserved pasta water until you reach the desired consistency.
