Ingredients
  

1 lb ground beef (80/20 blend)

1 large onion, thinly sliced

2 tbsp olive oil

2 tbsp unsalted butter

1 tsp salt, divided

1/2 tsp black pepper

4 slices of Swiss cheese

4 slices of rye bread (or your choice of bread)

1 tbsp Worcestershire sauce

1 tbsp Dijon mustard

Fresh arugula or spinach (for topping, optional)

Instructions
 

Caramelize the Onions:

    - In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and sprinkle with 1/2 tsp of salt. Cook slowly, stirring occasionally, until the onions are golden brown and caramelized, about 25-30 minutes. Stir in the Worcestershire sauce and set aside.

      Prepare the Patties:

        - In a mixing bowl, combine the ground beef, remaining 1/2 tsp salt, black pepper, and Dijon mustard. Form into 4 equal-sized patties, ensuring they are slightly larger than the bread as they will shrink while cooking.

          Cook the Patties:

            - In the same skillet used for the onions, add a bit more oil if necessary. Increase the heat to medium-high and place the patties in the skillet. Cook for about 3-5 minutes per side for medium doneness, or until cooked to your preference. In the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

              Assemble the Patty Melts:

                - On the outside of each slice of bread, spread a thin layer of butter. On the inside of each slice, layer the caramelized onions, followed by the cheese-topped patties, and fresh greens if using. Close the sandwiches with the remaining bread slices.

                    - Wipe the skillet clean and return to medium heat. Place the assembled sandwiches in the skillet, cooking for about 3-4 minutes per side, or until golden brown and crispy.
