2 pounds beef chuck, cut into 1-inch cubes

3 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 green bell peppers, diced

2 carrots, sliced

3 medium potatoes, peeled and cubed

1 can (14 oz) diced tomatoes, with juice

1 cup beef broth

2 tablespoons tomato paste

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

In a large, heavy pot or Dutch oven, heat the olive oil over medium-high heat.

    Season the beef cubes with salt and pepper, then add them to the pot. Brown the meat on all sides, approximately 5-7 minutes. Remove the browned meat and set it aside.

      In the same pot, add the diced onion, garlic, and green bell peppers. Sauté for about 5 minutes until the onions are translucent.

        Add the sliced carrots and cook for an additional 3 minutes.

          Stir in the diced tomatoes (with juice), beef broth, tomato paste, cumin, smoked paprika, oregano, and chili powder. Mix everything well to combine.

            Return the browned beef to the pot and bring the mixture to a simmer.

              Once simmering, reduce the heat to low and cover the pot. Let it cook for about 2 hours, stirring occasionally until the beef is tender.

                In the last 30 minutes, add the cubed potatoes to the pot. Adjust seasoning with additional salt and pepper if desired.

                  When the potatoes are cooked through and the beef is fork-tender, remove from heat.
