4 large carrots, peeled and grated

1 cup orange segments (fresh or canned)

1/2 cup dried cranberries

1/4 cup sliced almonds (toasted)

1/2 teaspoon ground ginger

1 tablespoon honey

2 tablespoons lemon juice

2 tablespoons olive oil

Salt and pepper to taste

Fresh mint leaves, for garnish

Instructions
 

In a large mixing bowl, combine the grated carrots, orange segments, and dried cranberries.

    In a separate small bowl, whisk together the ground ginger, honey, lemon juice, and olive oil until well combined.

      Pour the dressing over the carrot mixture and toss gently to coat evenly.

        Add the toasted sliced almonds to the salad and mix carefully to avoid crushing the nuts.
