1/2 cup cocoa powder

1 cup mashed bananas (about 2 large bananas)

3/4 cup maple syrup

1/4 cup unsweetened applesauce

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp salt

1/2 cup grated carrots

1/4 cup chopped walnuts (optional)

1/4 cup vegan chocolate chips

Instructions
 

Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.

    In a large mixing bowl, combine the almond flour, cocoa powder, baking soda, and salt. Mix well to eliminate any lumps.

      In another bowl, mash the bananas until smooth. Stir in the maple syrup, applesauce, and vanilla extract until fully combined.

        Pour the wet mixture into the dry mixture and stir until just combined. Be careful not to over-mix.

          Fold in the grated carrots, chopped walnuts (if using), and vegan chocolate chips until evenly distributed.

            Transfer the brownie batter into the prepared pan, smoothing out the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                Let the brownies cool in the pan for about 10 minutes, then transfer them onto a wire rack to cool completely.

                  Once cooled, cut the brownies into carrot shapes using a sharp knife. You can also pipe some green icing on top to create carrot tops using a mix of powdered sugar and plant-based milk if desired.
