1 medium head of cauliflower, riced (about 4 cups)

2 tablespoons sesame oil

3 green onions, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, bell peppers)

2 large eggs, lightly beaten

3 tablespoons soy sauce (low-sodium for a healthier option)

1 tablespoon sriracha (optional for heat)

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Instructions
 

Begin by preparing the cauliflower. Remove the leaves and stem, and cut the head into florets. Use a food processor to pulse the florets until they resemble rice grains (you can also grate it using a box grater).

    Heat a large skillet or wok over medium-high heat and add the sesame oil.

      Add the chopped green onions and minced garlic to the skillet, sautéing for about 30 seconds until fragrant.

        Incorporate the mixed vegetables into the pan and stir-fry for about 3–4 minutes, or until they are tender.

          Push the vegetable mixture to one side of the pan. Pour the beaten eggs into the empty side and scramble them until fully cooked. Once done, mix the eggs with the sautéed vegetables.

            Add the riced cauliflower to the pan and stir everything together. Cook for an additional 5–7 minutes, stirring frequently, until the cauliflower is tender but not mushy.

              Drizzle soy sauce and sriracha over the fried rice mixture, stirring well to combine all flavors. Season with salt and pepper to taste.

                Remove from heat and garnish with fresh cilantro or parsley before serving.
