Ingredients

1 package puff pastry (2 sheets), thawed

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup feta cheese, crumbled

1 egg, beaten (for egg wash)

2 cloves garlic, minced

1 tablespoon olive oil

¼ teaspoon nutmeg

Salt and pepper to taste

Sesame seeds (optional, for garnish)

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the chopped spinach to the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat and let it cool slightly.

In a mixing bowl, combine the ricotta, mozzarella, feta, nutmeg, salt, and pepper. Fold in the sautéed spinach and mix well until combined.

Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.

Place a generous spoonful of the cheese and spinach mixture in the center of each pastry square.

Fold the corners of the pastry over the filling to create a pocket and seal the edges by pressing them firmly together with a fork.

Place the stuffed pastries on the prepared baking sheet. Brush the tops with the beaten egg and sprinkle sesame seeds on top if desired.

Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed up.

Remove from the oven and let them cool slightly before serving. Enjoy your delicious cheese and spinach stuffed pastries!
