Cheese Roasted Tomato Pasta

2 cups cherry tomatoes, halved

3 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 teaspoon dried oregano

3 cloves garlic, minced

8 ounces pasta (farfalle or penne)

1 cup ricotta cheese

½ cup grated Parmesan cheese

½ cup shredded mozzarella cheese

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, toss the halved cherry tomatoes with 2 tablespoons of olive oil, balsamic vinegar, salt, pepper, and dried oregano until well coated.

      Spread the seasoned tomatoes on a baking sheet in a single layer and add minced garlic on top. Roast in the oven for about 20 minutes, or until tomatoes are blistered and caramelized.

        While the tomatoes are roasting, cook the pasta according to package instructions in a pot of salted boiling water until al dente. Drain the pasta and reserve ½ cup of pasta water.

          In a large mixing bowl, combine the cooked pasta with the roasted tomatoes (along with any juices), ricotta cheese, and the reserved pasta water to create a creamy consistency.

            Add in the grated Parmesan cheese and half of the mozzarella cheese, stirring gently until everything is well combined.

              Transfer the pasta mixture to a greased baking dish. Top with the remaining mozzarella cheese.

                Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.

                  Remove from the oven and let it cool for a few minutes before serving.
