1 pound ground beef

1 cup shredded cheddar cheese

1/2 cup diced onion

1/4 cup diced pickles

1 tablespoon ketchup

1 tablespoon mustard

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

12 egg roll wrappers

In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula as it cooks, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion to the skillet and cook for an additional 3-4 minutes until translucent.

      Stir in the diced pickles, ketchup, mustard, garlic powder, salt, and black pepper. Mix thoroughly and remove from heat.

        Let the beef mixture cool slightly, then stir in the shredded cheddar cheese until well combined.

          Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of the beef mixture in the center.

            Fold the bottom corner over the filling, then fold in the sides, and roll towards the top corner, sealing with a little water. Repeat with remaining wrappers and filling.

              Heat oil in a deep skillet or pot over medium-high heat. Test if it's ready by dropping a small piece of wrapper in; it should sizzle.

                Fry the egg rolls in batches, cooking for 3-4 minutes per side until golden brown and crispy. Remove and drain on paper towels.

                  Serve hot with extra ketchup or mustard for dipping.
