8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 cup whipped cream (store-bought or homemade)

Zest of 1 lemon (optional, for added zing)

1/4 cup graham cracker crumbs (for topping)

Fresh mint leaves (for garnish, optional)

Instructions
 

Start by rinsing the strawberries gently under cold water. Pat them dry with a paper towel.

    Slice the tops off each strawberry and carefully hollow out the center using a small knife or a melon baller. Set aside.

      In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

        Gradually add the powdered sugar and vanilla extract, continuing to beat until well incorporated.

          Gently fold in the whipped cream until the mixture is light and fluffy. If using lemon zest, add it now and mix until combined.

            Using a piping bag or a small spoon, fill each hollowed strawberry with the cheesecake mixture.

              Once all strawberries are filled, dip the tops of each stuffed strawberry into a plate of graham cracker crumbs, ensuring a good coating.

                Arrange the stuffed strawberries on a serving platter and garnish with fresh mint leaves if desired.

                  Chill in the refrigerator for at least 30 minutes before serving to allow the cream cheese filling to firm up slightly.
