2 large onions, sliced into thick rings

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional for heat)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk

1 cup shredded cheddar cheese

8 slices of crispy cooked bacon, chopped

1 cup breadcrumbs (Panko recommended for extra crunch)

Oil for frying

Instructions
 

Prep the Onions: Peel the onions and slice them into approximately 1-inch thick rings. Carefully separate the rings and set them aside.

    Make the Batter: In a mixing bowl, combine flour, baking powder, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Mix well. In another bowl, pour the buttermilk.

      Bacon and Cheese Mixture: In a small bowl, mix the chopped bacon and shredded cheddar cheese together. Set aside.

        Coat the Onion Rings: Dip each onion ring into the buttermilk, allowing any excess to drip off. Then, dredge the ring in the seasoned flour mixture, ensuring it's well coated. Repeat until all rings are coated.

          Stuff the Rings: Once coated, take a coated onion ring and carefully fill the center with the bacon and cheese mixture. Place another smaller onion ring atop the filled ring to create a sandwich. Press gently to hold the layers together. Repeat with the remaining rings.
