Cheesy Beef Potato Casserole

1 lb ground beef

4 large russet potatoes, thinly sliced

1 onion, diced

2 cloves garlic, minced

1 cup sour cream

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup beef broth

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper to taste

Chopped parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

      Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and fully cooked, about 8-10 minutes. Season with paprika, salt, and pepper. Remove from the heat and set aside.

        In a large bowl, mix together sour cream, half of the cheddar cheese, and half of the mozzarella cheese. Stir until well combined.

          In a greased 9x13 inch baking dish, layer half of the thinly sliced potatoes on the bottom, followed by half of the cooked beef mixture, and half of the sour cream cheese mixture. Repeat the layers with the remaining potatoes, beef, and cheese mixture.

            Pour beef broth evenly over the top of the casserole. This will help cook the potatoes during baking.

              Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

                After 45 minutes, remove the foil and sprinkle the remaining cheddar and mozzarella cheese on top.

                  Return the casserole to the oven and bake uncovered for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the potatoes are tender.

                    Once done, let the casserole cool for about 10 minutes before serving. Garnish with chopped parsley.
