Ingredients

1 lb ground beef

1 cup shredded cheddar cheese

1 cup mozzarella cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

6 large tortillas (flour or whole wheat)

1/2 cup salsa (for dipping)

Fresh cilantro, chopped (for garnish)

Instructions

Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.

Mix in Cheeses: Turn down the heat and add the cream cheese, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Stir until all cheeses are melted and well mixed with the beef.

Prepare Tortillas: Lay a tortilla flat on a clean surface. Spoon a generous portion of the cheesy beef mixture onto the center of the tortilla, spreading it evenly.

Roll Up: Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, ensuring the filling is sealed in. Repeat with the remaining tortillas and filling.

Cook the Roll-Ups: Wipe the skillet clean, then place the roll-ups seam side down. Cook on medium heat for about 2-3 minutes per side, or until golden brown and crispy. You may need to do this in batches.

Slice and Serve: Remove from heat and let cool for a minute. Slice each roll-up into bite-sized pieces, arrange on a serving platter, and garnish with fresh cilantro. Serve with salsa on the side for dipping.
