Ingredients

2 cups cooked shredded chicken (preferably rotisserie)

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup buffalo sauce (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

¼ teaspoon black pepper

½ cup green onions, sliced (for garnish)

Tortilla chips or veggie sticks (for serving)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Mix Base Ingredients: In a large mixing bowl, combine the softened cream cheese, shredded chicken, buffalo sauce, garlic powder, onion powder, smoked paprika, and black pepper. Mix until well combined and creamy.

Add the Vegetables: Fold in the black beans and corn gently, ensuring they are evenly distributed throughout the mixture.

Add Cheeses: Stir in ¾ cup of shredded sharp cheddar cheese and ¾ cup of shredded Monterey Jack cheese. Mix well until the cheeses are incorporated.

Prepare for Baking: Transfer the dip mixture into a greased 9x13 inch baking dish. Spread it out evenly, smoothing the top.

Top with Cheese: Sprinkle the remaining ¼ cup of cheddar and ¼ cup of Monterey Jack cheese over the top of the dip.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and slightly golden around the edges.

Garnish: Remove from the oven and let it cool for a few minutes. Garnish with fresh sliced green onions.

Serve: Serve warm with tortilla chips or veggie sticks for dipping. Enjoy your delicious and cheesy buffalo chicken dip!
