4 cups fresh broccoli florets

1 cup cooked quinoa

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 cup milk (dairy or non-dairy)

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole grain)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring salted water to a boil. Add in the broccoli florets and blanch for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

      In a large mixing bowl, combine the cooked quinoa, softened cream cheese, milk, cheddar cheese, Parmesan cheese, garlic powder, onion powder, cayenne pepper, salt, and pepper. Mix until smooth and creamy.

        Stir in the blanched broccoli and olive oil, ensuring that all ingredients are well combined.

          Pour the broccoli mixture into a greased 9x13 inch baking dish, spreading it evenly across the bottom.

            In a small bowl, mix the breadcrumbs with lemon juice and a pinch of salt. Sprinkle this breadcrumb mixture evenly over the casserole.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.

                Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
