Ingredients

1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese (divided)

1/2 cup milk

1 large onion, finely chopped

2 cloves garlic, minced

1 large egg

1 tablespoon Worcestershire sauce

2 teaspoons Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups mixed vegetables (such as bell peppers, zucchini, and carrots)

1 cup marinara sauce

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a large casserole dish.

Prepare Meat Mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, 1/2 cup of cheddar cheese, milk, onion, garlic, egg, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated.

Layer Vegetables: Spread the mixed vegetables evenly at the bottom of the greased casserole dish.

Add Meat Mixture: Form the meat mixture into a loaf shape and place it on top of the vegetables in the casserole dish. Ensure it’s evenly distributed.

Marinara Sauce: Pour the marinara sauce over the meatloaf, ensuring it covers the top.

Add Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the marinara sauce.

Bake: Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the meatloaf is cooked through and the cheese is bubbly and golden.

Rest and Serve: Remove the casserole from the oven and let it rest for about 10 minutes before slicing. Garnish with chopped fresh parsley if desired.

Enjoy: Serve warm with a side of your choice, and enjoy the cheesy and hearty flavors of your loaded meatloaf casserole!
