Ingredients

4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 teaspoons garlic powder

2 teaspoons Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 large eggs

1 cup flour (for dredging)

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil (for frying)

Instructions

Prepare the Coating: In a shallow bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper. In another bowl, whisk the eggs until well beaten. Place the flour in a third shallow dish.

Prep the Chicken: Pat the chicken breasts dry with paper towels. This will help the coating stick better.

Dredge the Chicken: First, dip each chicken breast into the flour, shaking off any excess. Then, coat it in the beaten eggs, allowing any excess to drip off. Finally, press the chicken into the Parmesan breadcrumb mixture, ensuring it is evenly coated on all sides.

Fry the Chicken: Heat a generous amount of olive oil in a large skillet over medium-high heat. Once hot, add the coated chicken breasts. Cook for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). You may need to do this in batches to avoid overcrowding the pan.

Drain and Garnish: Once cooked, transfer the chicken to a paper towel-lined plate to absorb any excess oil. Sprinkle with freshly chopped parsley before serving.
