Ingredients
  

2 large potatoes, peeled and diced

1 tablespoon olive oil

1 small onion, finely chopped

1 bell pepper (any color), diced

4 large eggs

1/2 cup shredded cheddar cheese

Salt and black pepper, to taste

1/2 teaspoon paprika (optional)

Fresh parsley, chopped for garnish

Instructions
 

Cook the Potatoes: In a medium pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-12 minutes. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.

      Combine Ingredients: Add the cooked potatoes to the skillet with the onions and peppers. Stir gently to combine and cook for an additional 3-4 minutes until everything is heated through.

        Add Eggs: In a bowl, whisk together the eggs, salt, black pepper, and paprika (if using). Pour the egg mixture into the skillet, stirring gently to scramble the eggs together with the potato mixture.

          Melt the Cheese: Once the eggs start to set but are still slightly runny, sprinkle the shredded cheddar cheese over the top. Cover the skillet with a lid and let it cook for another minute until the cheese melts and the eggs are cooked to your liking.

            Serve: Remove from heat, garnish with fresh parsley, and serve hot.
