1 lb baby potatoes, halved

1 lb smoked sausage, sliced

1 tablespoon olive oil

1 packet ranch seasoning mix

2 cups shredded cheddar cheese

1 cup sour cream

2 green onions, sliced

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, toss the halved baby potatoes with olive oil, ranch seasoning, salt, and pepper until well coated.

      Spread the seasoned potatoes evenly on a large baking sheet lined with parchment paper.

        Bake in the preheated oven for 25 minutes, or until the potatoes are tender and beginning to crisp.

          While the potatoes are baking, heat a skillet over medium heat. Add the sliced smoked sausage and sauté for about 5-7 minutes until it is browned and heated through.

            Remove the potatoes from the oven and add the sautéed sausage on top of the potatoes. Sprinkle the shredded cheddar cheese over the sausage and potatoes evenly.

              Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                Once done, remove from the oven and drizzle sour cream on top. Garnish with fresh green onions and parsley if desired.
