Ingredients

8 oz rotini or penne pasta

1 lb ground beef

1 can (10 oz) diced tomatoes with green chilies (Rotel)

1 can (8 oz) tomato sauce

1 cup beef broth

1 tsp garlic powder

1 tsp onion powder

½ tsp cumin

½ tsp smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup sour cream

Fresh cilantro or parsley for garnish (optional)

Instructions

Cook Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Brown the Beef: In a large skillet over medium heat, add ground beef. Cook until browned, about 5-7 minutes, breaking it up with a spoon. Drain excess fat if necessary.

Add Seasonings: Add garlic powder, onion powder, cumin, smoked paprika, salt, and pepper to the cooked beef. Stir to combine and let cook for an additional 1-2 minutes until fragrant.

Combine Ingredients: Pour in the Rotel tomatoes (with juices), tomato sauce, and beef broth. Stir until well combined and bring the mixture to a gentle simmer. Let it cook for about 5 minutes to allow flavors to meld.

Incorporate the Pasta: Add the drained pasta into the skillet with the beef mixture. Stir well to coat the pasta with the sauce.

Cheesy Goodness: Reduce heat to low and stir in the shredded cheddar cheese and sour cream. Mix until the cheese is melted and everything is creamy and well combined.

Serve: Taste and adjust seasoning as necessary. Serve hot, garnished with fresh cilantro or parsley if desired.
