2 cups cooked rice (white or brown)

1 lb boneless, skinless chicken breasts, diced

1 cup salsa (mild or spicy, based on preference)

1 cup shredded cheddar cheese

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen or canned)

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken breasts and season with garlic powder, cumin, paprika, salt, and pepper. Cook until the chicken is no longer pink, about 6-8 minutes.

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, salsa, black beans, corn, and the cooked chicken. Stir until well mixed.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

          Add Cheese: Sprinkle shredded cheddar cheese over the top of the chicken and rice mixture.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from oven and let it cool slightly. Garnish with fresh cilantro or green onions if desired. Serve warm and enjoy!
