Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, chilled and diced

1 cup shredded sharp cheddar cheese

1 cup cooked sausage, crumbled (spicy or mild, your choice)

3/4 cup buttermilk

1 tablespoon chopped fresh chives (optional for garnish)

Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until combined.

Add Butter: Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Incorporate Cheese and Sausage: Stir in the shredded cheese and crumbled sausage, mixing until evenly distributed.

Add Buttermilk: Create a well in the center of the mixture and pour in the buttermilk. Gently stir until just combined—do not overmix; a few lumps are okay.

Shape the Biscuits: Turn the dough out onto a floured surface. Gently pat it into a 1-inch thick rectangle. Using a floured biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet. Gather excess dough, pat down, and cut out additional biscuits.

Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Cool and Garnish: Allow biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack. If desired, sprinkle fresh chives on top for a pop of color and flavor.
