8 ounces rotini pasta (or any pasta of your choice)

1 pound ground beef or turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 can (14.5 ounces) diced tomatoes, undrained

1 can (15 ounces) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup beef or chicken broth

1 cup cheddar cheese, shredded

½ cup sour cream

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional toppings: sliced jalapeños, avocado, lime wedges

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to the package instructions until al dente. Drain and set aside.

    Sauté the Meat: In a large skillet over medium heat, add olive oil. Once hot, add the ground beef or turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat, if necessary.

      Add Aromatics: To the skillet with the meat, add the diced onion and cook for about 3-4 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds until fragrant.

        Season and Simmer: Sprinkle the taco seasoning over the meat mixture, stirring to combine. Add in the diced tomatoes (with their juice), black beans, corn, and broth. Mix well and bring to a simmer. Cook for about 5 minutes until heated through.

          Combine with Pasta: Stir the cooked rotini into the skillet, mixing all ingredients together. Reduce heat to low and add in the shredded cheddar cheese and sour cream, stirring until the cheese is melted and everything is nicely combined. If the mixture is too thick, add a little more broth until you reach your desired consistency.

            Season and Serve: Taste and adjust seasoning with salt and pepper as necessary. Top with chopped cilantro and any desired toppings like jalapeños or avocado. Serve hot with lime wedges on the side for squeezing.
