Ingredients
  

1 lb cooked chicken, shredded

8 small flour tortillas

2 cups shredded Monterey Jack cheese

1 cup sour cream

1 can (10 oz) green enchilada sauce

1 can (10 oz) cream of chicken soup

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

Chopped fresh cilantro (for garnish)

Sliced green onions (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken with 1 cup of shredded Monterey Jack cheese, half of the sour cream, garlic powder, onion powder, cumin, salt, and pepper. Mix well until all the ingredients are evenly combined.

      In another bowl, whisk together the green enchilada sauce, cream of chicken soup, and the remaining sour cream until smooth.

        Take a tortilla and spoon about 1/4 cup of the chicken mixture onto the center. Roll the tortilla tightly around the filling and place seam-side down in a greased 9x13 inch baking dish. Repeat with the remaining tortillas and filling.

          Once all the tortillas are in the dish, pour the enchilada sauce mixture evenly over the top. Sprinkle the remaining Monterey Jack cheese on top.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro and green onions before serving.
