2 cups leftover mac and cheese

1 cup crushed Cheetos (plus extra for coating)

1/2 cup mozzarella cheese, shredded

1/4 cup cream cheese, softened

1/4 cup all-purpose flour

2 large eggs

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

Salt and pepper, to taste

Oil for frying

Prepare the Mac 'n' Cheese: If your leftover mac and cheese is cold from the fridge, heat it up slightly in a saucepan or microwave to make it easier to handle.

    Mix the Filling: In a mixing bowl, combine the warmed mac and cheese, mozzarella cheese, cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined and the cheeses are evenly distributed.

      Form the Lava Bombs: With your hands, scoop a generous tablespoon of the mac and cheese mixture and form it into a ball. Press your thumb into the center to create a small hollow. Carefully add a teaspoon of crushed Cheetos into the hollow, then close the ball around it and reshape to seal. Repeat until all the mixture is used.

        Prepare the Coating: Set out three bowls—one with flour, one with the beaten eggs, and one with crushed Cheetos. Roll each mac 'n' cheese ball first in flour, then dip it in the egg, and finally coat it in crushed Cheetos.

          Heat the Oil: In a deep frying pan, heat oil over medium-high heat until it reaches 350°F (175°C). Make sure there’s enough oil to submerge the balls.

            Fry the Bombs: Carefully drop a few coated lava bombs into the hot oil, being sure not to overcrowd the pan. Fry them for about 3–4 minutes or until they are golden brown and crispy. You may need to flip them halfway through for even frying.
