Ingredients
  

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup cherry pie filling

8 egg roll wrappers

1 egg, beaten (for sealing)

1 cup vegetable oil (for frying)

Optional: whipped cream for serving

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Lay out an egg roll wrapper on a flat surface with one corner pointing towards you.

      Spoon approximately 2 tablespoons of the cream cheese mixture onto the center of the wrapper, then add a tablespoon of cherry pie filling on top.

        Fold the bottom corner of the wrapper over the filling, then fold in the sides snugly and roll it up tightly, sealing the top corner with a little beaten egg. Repeat with the remaining wrappers and filling.

          In a large skillet, heat the vegetable oil over medium heat. Once hot, gently place a few egg rolls in the oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.

            Remove the egg rolls from the skillet and place them on a paper towel-lined plate to drain excess oil.

              Allow to cool slightly before serving.
