Ingredients

3 cups cooked chicken, shredded

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

2 cups mixed frozen vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1 cup cheddar cheese, shredded

1 1/2 cups biscuit mix (such as Bisquick)

2/3 cup milk

Fresh parsley, chopped for garnish

Instructions

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the shredded chicken, cream of chicken soup, chicken broth, frozen vegetables, garlic powder, onion powder, black pepper, and thyme. Stir well until everything is nicely combined.

Pour the chicken mixture into a greased 9x13 inch casserole dish, spreading it evenly.

In a separate bowl, whisk together the biscuit mix and milk until a soft dough forms. It should be thick but pourable.

Using a spoon or cookie scoop, dollop the biscuit dough over the chicken mixture. It does not need to cover the entire surface; allow gaps for the steam to escape.

Sprinkle the shredded cheddar cheese evenly over the top of the dumplings.

Bake the casserole in the preheated oven for 30-35 minutes, or until the biscuits are golden brown and the filling is bubbling.

Once baked, remove from the oven and let it cool for about 5-10 minutes before serving.

Garnish with fresh chopped parsley for a pop of color and additional flavor.
