2 cups cooked chicken, shredded

1 cup button mushrooms, diced

1 cup onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon Dijon mustard

Salt and pepper to taste

1 package (16 oz) puff pastry, thawed

1 egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the onions and garlic, and sauté for about 5 minutes until translucent.

    Add Mushrooms: Stir in the diced mushrooms and cook for another 5-7 minutes until they are golden brown and any liquid has evaporated.

      Mix Chicken & Sauce: Add the shredded chicken, heavy cream, Dijon mustard, and thyme to the skillet. Stir to combine, season with salt and pepper, and let it simmer on low heat for about 5 minutes until thickened. Remove from heat and let cool slightly.

        Prepare Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface. Cut it into squares, ideally about 4x4 inches in size.

          Fill Pastry: Place a generous spoonful of the chicken mixture in the center of each pastry square. Be careful not to overfill.

            Seal Pastry: Fold the corners of the pastry over the filling to form a triangle or rectangle. Use a fork to seal the edges tightly.

              Apply Egg Wash: Brush the top of each pastry with the beaten egg for a golden finish.
