Ingredients

2 chicken breasts, boneless and skinless

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon cayenne pepper

2 large sweet potatoes, peeled and grated

2 eggs

1/4 cup maple syrup

1/2 teaspoon vanilla extract

Cooking spray or oil for frying

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, smoked paprika, salt, and black pepper. Add the chicken breasts and ensure they are fully coated. Cover and refrigerate for at least 2 hours (or overnight for best results).

Prepare the Waffle Batter: In a large mixing bowl, whisk together the flour, baking powder, cayenne pepper, and a pinch of salt. In another bowl, beat the eggs and mix in the grated sweet potatoes, maple syrup, and vanilla extract. Combine both mixtures and stir until just mixed (some lumps are okay).

Cook the Chicken: Heat a skillet over medium heat and add enough oil to coat the bottom. Remove chicken from the marinade, letting excess drip off, then dredge in flour. Fry each chicken breast for 6-8 minutes per side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Make the Waffles: Preheat your waffle maker. Lightly spray with cooking oil. Pour enough batter to cover the bottom of the waffle iron and cook according to the manufacturer's instructions until golden and crispy. Repeat until all batter is used.

Serve: Place a warm sweet potato waffle on a plate, top with a crispy chicken breast, and drizzle generously with maple syrup.

            - Prep Time: 15 minutes | Total Time: 1 hour | Servings: 4 servings

Presentation Tips: Stack the chicken directly on top of the waffle and garnish with fresh herbs like cilantro or parsley for a pop of color. Serve with additional syrup on the side for dipping. Enjoy your sweet and savory delight!
