Chicken Avocado Melt Sandwich

2 cups cooked chicken, shredded

1 ripe avocado, mashed

1 tablespoon lime juice

½ teaspoon garlic powder

Salt and pepper to taste

4 slices of whole grain bread

1 cup shredded mozzarella cheese

¼ cup fresh cilantro, chopped

2 tablespoons mayonnaise

1 medium tomato, sliced

Cooking spray or butter for toasting

Instructions
 

In a medium bowl, combine the shredded chicken, mashed avocado, lime juice, garlic powder, salt, and pepper. Mix until well combined.

    Spread a thin layer of mayonnaise on one side of each slice of bread.

      On the other side of the bread, place a generous portion of the chicken and avocado mixture on two slices.

        Top the chicken mixture with slices of tomato, sprinkle with fresh cilantro, and then add a handful of shredded mozzarella cheese.

          Place the remaining slices of bread on top, mayo side up, to form sandwiches.

            Heat a skillet or griddle over medium heat and lightly coat with cooking spray or butter.

              Place the assembled sandwiches in the skillet and cook for about 3-4 minutes on one side, until golden brown.

                Carefully flip the sandwiches, press down slightly with a spatula, and toast the other side for an additional 3-4 minutes, or until cheese is melted and the bread is crispy.

                  Remove from the skillet and let cool for a minute before slicing in half.
