2 cups cooked chicken, shredded

4 strips of bacon, chopped

4 medium potatoes, peeled and diced

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream (or coconut milk for a lighter option)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, sliced for garnish

Fresh parsley, chopped for garnish

Instructions
 

In a large pot over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the drippings in the pot.

    Add the diced onion to the pot and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the diced potatoes, smoked paprika, and dried thyme. Cook for another 2-3 minutes.

        Pour in the chicken broth, scraping any browned bits off the bottom of the pot. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use a potato masher to slightly mash the soup, leaving some chunks for texture.

            Stir in the shredded chicken, cooked bacon, and heavy cream. Heat through and season with salt and pepper to taste. Allow it to simmer on low for an additional 5 minutes.

              Remove from heat and let sit for a couple of minutes to thicken slightly.

                Serve hot, garnished with sliced green onions and chopped parsley.
