2 cups cooked chicken, shredded or diced

1 can (15 oz) diced tomatoes, drained

1 cup fresh basil leaves, chopped

1 cup mozzarella cheese, shredded

1 cup ricotta cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 French baguette, sliced into ¾ inch pieces

2 tablespoons olive oil

Optional: Additional fresh basil and balsamic glaze for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken Mixture: In a large bowl, combine the cooked chicken, diced tomatoes, chopped basil, the ricotta cheese, garlic powder, onion powder, balsamic vinegar, oregano, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Prepare the Baking Dish: In a greased 9x13 inch baking dish, layer half of the sliced baguette pieces at the bottom. You can slightly overlap them.

        Add Chicken Mixture: Spoon the chicken mixture evenly over the layer of bread. Spread it out to ensure it covers the bread slices fully.

          Second Layer: Top the chicken mixture with the remaining baguette slices, placing them on top in a single layer for a crusty finish.

            Add Cheese: Sprinkle the shredded mozzarella cheese generously on top of the casserole.

              Drizzle with Olive Oil: Lightly drizzle the olive oil over the top of the casserole to help brown the bread.

                Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the top is golden and the cheese is bubbly.

                  Garnish and Serve: Once cooked, remove from the oven and let it cool for a few minutes. Sprinkle additional fresh basil and drizzle with balsamic glaze if desired before serving.
