300g fettuccine pasta

2 boneless chicken breasts, thinly sliced

4 pieces of bacon or pancetta, chopped

3 cloves garlic, minced

2 large eggs

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and reserve about 1 cup of the pasta water.

    Cook the bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 4-5 minutes. Remove the bacon with a slotted spoon and set it aside, leaving the bacon fat in the skillet.

      Sauté the chicken: In the same skillet, add the olive oil if needed. Then, add the sliced chicken. Season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-7 minutes. Stir in the minced garlic during the last minute to avoid burning.

        Prepare the sauce: In a separate bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until smooth. Add a pinch of salt and pepper.

          Combine pasta and sauce: Reduce the heat to low. Add the cooked fettuccine and bacon to the skillet with the chicken, tossing well to combine. Pour the egg and cream mixture over the pasta, stirring quickly to coat the pasta without scrambling the eggs. If the sauce is too thick, slowly add reserved pasta water until you reach the desired creamy consistency.

            Serve: Remove from heat and let the pasta sit for a minute to allow the sauce to thicken slightly. Serve topped with additional Parmesan cheese and chopped fresh parsley for garnish.
