Ingredients
  

4 boneless, skinless chicken thighs

2 tablespoons chipotle in adobo sauce, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon honey

Salt and pepper to taste

1 lime, juiced

Fresh cilantro, for garnish

1 avocado, sliced, for serving

4 small flour tortillas

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the minced chipotle in adobo, olive oil, smoked paprika, garlic powder, onion powder, honey, lime juice, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

      Rest and Slice: Once cooked, remove the chicken from the heat and let it rest for 5 minutes. This will help keep it juicy. After resting, slice the chicken into thin strips.

        Warm the Tortillas: In a separate skillet, warm the flour tortillas over medium heat for about 30 seconds on each side until pliable and lightly toasted.

          Assemble the Chipulos: Place a few slices of grilled chicken on each tortilla. Top with sliced avocado and garnish with fresh cilantro. You can also add an extra squeeze of lime if desired.

            Serve: Roll or fold the tortillas, serve with a side of your favorite salsa or a fresh salad.
